Something sea-sonal (see what I did there).
Take two lovely meaty hake fillets (from Costco) defrosted.
Spray a square of foil with fry light buttery.
Thinly slice some fennel, carrot and courgette and make a bed on the foil. Add a bay leaf and another spritz of frylight
Place the fish on top, season and scrunch up foil to make a little parcel.
Bake in the oven for about 10 -15 minutes.
I served the fish with new potatoes and carrots from the garden and some steamed peas, cauliflower and broccoli.
Lots of veg and all syn free!
