Lazing on a Sunday afternoon

Late lunch – or early dinner- today was a slow cooked brisket, leisurely roasted on a bed of vegetables (red onion, carrot, celery, courgette, garlic, roasted red peppers, garlic and a can of plum tomatoes) and herbs until meltingly tender. No wine was added to keep it SW friendly!
As the meat rested I whizzed up the vegetables with the stick blender to make a delicious thick sauce.
The brisket was served up with some roasted new potatoes and parsnips (cooked in frylight of course), steamed carrots and cauliflower. The others added yorkshire puddings to their plates but I opted for a glass of red wine instead (6 syns).
Happy to report there is enough leftover beef and sauce for tomorrow with some fresh veg. Monday is sorted.
I torgot to take a photo, dear reader – you will have to use your imagination today.
So now it’s feet up on the sofa with a cuppa and my book. Cheers 🙂
