350/365 today I

Today I had more fun with leftovers.
Pea and ham soup – usual recipe, now stashed in the freezer ready for back to work.
For lunch we had a turkey and ham lasagne. I heated together some chunks of stuffing, chopped shallots, turkey, cubes of ham, leftover gravy (made with the turkey juices and flavoured with port) and a splash of double cream. I layered this with lasagne and a layer of spinach ( frozen spinach microwaved to defrost, mixed with a spoonful of cream and a bit of grated nutmeg). Quick cheese sauce on top only and popped in oven for about 35 mins. Served with green salad and crusty bread. Fabulous!
Later found some leftover bread sauce that I could have added and also the cranberry, but I will use that up tomorrow instead.
