Today I…made soup. Chicken noodle soup. Comfort food.
Sweat one finely chopped onion and one small diced carrot in a little oil until soft.
Add home made chicken stock and bring to a simmer. I added a chicken stock cube and some extra water to make it go further. Quantities vary depending on your leftovers- I made enough for 4 portions.
Throw in a handful of frozen peas or some frozen spinach. You need a bit of green for colour!
Chop or shred some cooked chicken leftovers into small pieces then add and simmer.
Add some fine pasta ( is it called angel hair?) or broken spaghetti for the last 5-10 minutes.
Season to taste.
A thrifty way to use leftovers, costs pennies but tastes absolutely delicious.
