277/365 Today I… am menu planning

Today I… have been menu planning.

Looking ahead to next week, I am out Monday to Wednesday evenings with panto and other committments (to be revealed) so I need to choose meals that can be prepared in advance or that don’t take much time.  *dusts off slow-cooker*

Tonight (Saturday) is ‘Strictly night’ so we will be on the sofa with the fire lit and a bottle of red – this calls for something simple but special. I have some flank steak ( delicious) with a jacket potato, mushrooms and green beans. Now the mince pies are open (see last night’s blog for the guilty confession) we can scoff the rest with some ice cream or a glass of baileys (or both).

Sunday: Massaman beef curry in the slow cooker. This is my go-to recipe when I am busy during the day and want something great to look forward to. Melt in the mouth, mildly spiced beef with new potatoes and onions in a rich, coconut and peanut sauce. Even better the next day!

We are a two slow cooker family – one large, one small – so the other one will be in use today making some soup to take to work for lunch. Possibly making soda bread or as I have some polenta to use up ( bought it when it was on offer but we don’t really like it) and I’ve found a recipe for cornbread and cheese muffins.

Monday: Rehearsals start early this week- fishcakes, with homemade wedges and steamed broccoli.

Tuesday: Martin & I are out at a gig in Leamington Spa – we are going to see The Boomtown Rats – I am SOOOOOO excited, I was a massive fan in the 1970s!!!
Slow cooker today, then, so we have time to eat before we go out. I have in mind some sort of sausage casserole with onions, carrots, tomatoes and cannelini beans- a hint of paprike maybe or BBQ sauce? Cider? Whatever’s in the bottom of the fridge…

Wednesday: Rehearsals again. Roasted butternut squash risotto. Mmmmmm.

Thursday: Pasta bake- bacon, leek, mushroom and tomato with cheesy breadcrumb topping.  A good way to use up bits and bobs lying around.

Friday: to be decided.
