Today I…am sharing the recipe for the watermelon gazpacho that my sister and I made at the weekend.
Inspired by recipes from Ottolenghi and various others that we found on the internet, Jackie and I made up our own recipe according to what we had at hand.
Makes 4pts 2.7L ( fills a milk carton)
1200g watermelon chopped into small chunks
600g ripe tomatoes (peeled)
1/2 red pepper chopped
1/2 yellow pepper chopped
1/2 orange pepper chopped
2 or 3 stalks of celery plus pale leaves chopped
2 garlic cloves chopped
1 red onion finely chopped
100g white bread from a crusty loaf or baguette in rough chunks
200g passata or tinned chopped tomatoes
2 tbsp olive oil
4 tbsp sherry or red wine vinegar
salt and pepper
Blend all except oil and vinegar until smooth. Add oil and vinegar and season to taste.
Serve with finely chopped peppers, cucumber, herbs, ice cubes, drizzle of oil to garnish.
We thought it was lovely- refreshing and sweet but with the sharpness of the vinegar to balance. Substitute cucumber for some of the melon. A little chilli or a drizzle of chilli oil would also be good. Chopped basil or mint would also be nice.
We tried to blend the chopped ingredients in a smoothie blender which made a bit of a mess- the kitchen looked like an earthquake had hit Southampton!
