176/365 Today I…made risotto

Today I made risotto.  It’s my go-to comfort dish that never lets me down.

There is something calming and grounding about the stirring- no matter how busy you think you are, you have to just put everything on hold for 20 minutes and stir.  Time to review the day, or plan tomorrow, or sing along to the radio.

Tonight I softened a chopped leek in butter and oil with a few small cubes of chorizo before adding the arborio rice and a splash of vermouth. I hardly ever have white wine open so dry vermouth is a great alternative.  Twenty minutes or so of gently stirring in hot chicken stock (from a cube), a handful of frozen peas and some chopped mint from the garden and we are nearly there.  A knob of butter and some freshly grated grana padano to finish off. Perfect.

Cheap and ever so cheerful.  Big day tomorrow so must get to bed. Night x
