Today I… am thrilled to show off our little harvest from the vegetable plot.
Carrots, sugar snap peas, french beans and baby beetroot. I steamed the carrots and beans and peas very, very briefly and anointed them with a blob of butter to glaze. They tasted so good! The baby beets were wrapped in foil with a twist of salt and a glug of rapeseed oil, and baked in the oven for about 25 minutes. They were sweet and delicious.
Today I… can also report that the lemon meringue pie was eventually made, with the help of my sister who did the tricky bit with the measuring and zest grating etc. It was just as fluffy and pillowy as promised. Photos to follow.
